The Ayer catfish is a freshwater fish found in rivers and lakes throughout the Indian subcontinent. It’s a solid-fleshed fish with few bones, making it ideal for frying. A light dusting of spices is all it needs to bring out its flavor. Curries with lots of sauce are another great option.

Ayre fish is a medium sized catfish popularly called Aar machh in Bengali. This is a single-boned fish and is extremely meaty. BD Ayre fish is cut into blocks, cleaned and then packed, sealed and frozen. These fish can be used to cook a spicy, Bengali fish curry called Aar Machher Kosha.
