The ginger plant is a perennial with an underground stem (rhizome) that is thick and branched. The outer layer of the rhizome is brown, and the inner layer is yellow. The ginger plant has a spicy, citrusy aroma. Every year, the ginger plant produces pseudostems (false stems made of tightly wrapped leaf bases) from the rhizome. The pseudostems bear narrow leaves.
