Appams are a breakfast dish from Kerala, India. They are crispy on the outside and soft and fluffy on the inside. The batter is made with rice, rice flake, fenugreek seed, urad dhal, which are soaked, ground and fermented. Appams can be served with a variety of dishes, including vegetable stew, kadala curry (chickpea curry), vegetable korma, coconut chutney or milk. They are usually made in an appachatti, but if you don’t have one, you can use a normal skillet or non-stick pan.
