Bay leaves, also known as laurel leaves, are dried leaves from an evergreen shrub or tree. They’re usually olive green in color, with a glossy upper surface and a duller, brown lower surface with prominent veins. Bay leaves can be used to add flavor to various dishes.

Bay leaves are dried and used whole or powdered to add flavor to stews, stuffings, fish, and other dishes. They contain a high concentration of essential oil, with the main component being cineole. Bay leaves have a bitter taste but are delicately fragrant. They were used medicinally in the Middle Ages and as laurel wreaths to crown victorious athletes in ancient Greece.
